Potatoes and Peppers - Traditional recipe from Calabria

Potatoes and Peppers is a traditional Calabrian side dish, especially popular in South italy.

Ingredients ( Serves 4 )
600 g potatoes, peeled and sliced
3 red or yellow peppers, sliced
3 tbsp extra-virgin olive oil
1 garlic clove, lightly crushed
Salt, to taste
Black pepper, to taste
Method
Parboil the sliced potatoes for 5 minutes, then drain.
Heat olive oil in a large pan and gently cook the garlic.
Add potatoes and cook until lightly golden.
Stir in the sliced peppers and cook on medium heat for 15–20 minutes.
Season with salt and pepper and serve warm.
