Pane Carasau Lasagne

Pane Carasau Lasagne is a traditional Sardinian dish made by layering crispy pane carasau with tomato sauce and cheese, creating a rustic baked meal similar to lasagne.
It reflects Sardinia’s tradition of using long-lasting flatbread in creative ways.

Ingredients ( Serves 4)

  • 6 sheets pane carasau

  • 500 ml tomato sauce

  • 250 g mozzarella, sliced

  • 80 g grated Pecorino Sardo

  • 2 tbsp extra-virgin olive oil

  • Fresh basil (optional)

Method

  1. Lightly moisten pane carasau with warm water.

  2. Layer bread, tomato sauce, mozzarella and Pecorino in a baking dish.

  3. Repeat layers and finish with cheese.

  4. Bake at 180°C (350°F) for 20–25 minutes.

  5. Rest 5 minutes before serving.

Tips and Variations

  • Do not over-soak the bread.

  • Best served warm, not piping hot.
