Pane Carasau Lasagne (Sardinian Flatbread Lasagne)

Pane Carasau Lasagne is a traditional Sardinian dish made by layering crispy pane carasau with tomato sauce and cheese, creating a rustic baked meal similar to lasagne.

Ingredients ( Serves 4)
6 sheets pane carasau
500 ml tomato sauce
250 g mozzarella, sliced
80 g grated Pecorino Sardo
2 tbsp extra-virgin olive oil
Fresh basil (optional)
Method
Lightly moisten pane carasau with warm water.
Layer bread, tomato sauce, mozzarella and Pecorino in a baking dish.
Repeat layers and finish with cheese.
Bake at 180°C (350°F) for 20–25 minutes.
Rest 5 minutes before serving.
Tips and Variations
Do not over-soak the bread.
Best served warm, not piping hot.
